Monday: Labor Day Holiday
Breakfast: Poached eggs with toast
Early Dinner: BBQ

Breakfast: Orange Danish
Early Dinner: Pork fajitas

Breakfast: French toast
Early Dinner: Grilled chicken over salad

Breakfast: Spinach omelette
Early Dinner: Red fish with jasmine rice

Breakfast: Breakfast burritos
Early Dinner: Chili and cornbread. (See my friend, Jenny Schwartz’s recipe here.)

Breakfast: Breakfast out since we’ll be hitting garage sales
Early Dinner: Shrimp fried rice and egg rolls

It’s the Labor Day weekend. My friend, Mel, teased me a couple of weeks ago because I asked her when Labor Day was. The trials and tribulations of being retired. 😀 Other than remembering when Fridays roll around (because that’s when trash gets picked up), I don’t keep track of days.

We’re planning a traditional BBQ feast with friends on Monday. Gas is getting hard to find but our friends say they can make it.

This week is Meet The Maker Day for our pig. She’s had a good run, and it’s time to settle accounts. She grew out beautifully, but she was a lot more work than any of the other pigs we’ve raised. With as much meat as she’ll provide, we won’t need to raise another hog for a year, then we can decide if it’s worth the trouble to do it again. I am down to one pork roast which I plan to use up this week.

    • Betty: I used to have a poacher but I don’t know what happened to it. I probably sold it at a garage sale thinking I’d never use it again. Minds change though and now I wish I still had it. I don’t poach eggs near as nicely as I did when I had that poacher.
