Menu for the week of October 8, 2017

Early Dinner: Shrimp and basil pasta

Breakfast: Leftover pancakes
Early Dinner: Dinner out. It’s our anniversary!

Breakfast: Sausage and cheesy eggs
Early Dinner: Leftovers from our dinner out. There are always leftovers. 🙂

Breakfast: Toast and juice
Early Dinner: Salmon with stir-fried spinach

Breakfast: Bacon and eggs
Early Dinner: Chili

Breakfast: Breakfast out since we’ll be hitting garage sales
Early Dinner: Lasagna for two

Duck breast and bok choy

Last week we had deep fried duckling which was absolutely delicious. It was so tender, the meat fell off the bones. I’ve tried roasting duck but it’s never quite as moist and tender as when we deep fry it. I’m pretty sure we’re going to fry a turkey this Thanksgiving too.

We also had our first taste test of the pig we raised. Excellent meat. I have a deep reverence for animals we raise for consumption. When you’re far removed from the process of getting the food you eat, it isolates you from all that’s involved. That hamburger you ate for lunch was once a living creature. This is why we try so hard to give our animals a good life. It’s the least we can do.

This Tuesday is our 42nd wedding anniversary. Traditionally, we go out somewhere for an excellent meal. I’m not yet sure where we’ll go, but I’m sure there will be leftovers. Can’t wait!
