Monday
Breakfast: Corned beef hash and eggs
Early Dinner: French onion soup

Tuesday
Breakfast: Bacon and eggs
Early Dinner: Leftover rib roast

Wednesday
Breakfast: (leftover) Steak and eggs
Early Dinner: Shrimp stir fry

Thursday
Breakfast: Cheese quesadillas
Early Dinner: Pork tips stew

Friday
Breakfast: Toast and juice
Early Dinner: Last of the rib roast in French bread sandwiches

Saturday
Breakfast: Breakfast out since we’ll be hitting garage sales
Early Dinner: Leftover stew

It turned chilly on Friday, but we should get back to nicer weather after Halloween. I used the cooler weather to make some freezer meals for the future. I made a half dozen meat loaves. I promise to post my recipe soon.

People either love or hate meat loaf. I used to make them frequently years ago, but for some reason I stopped. Then I came across a recipe I liked. I tweaked it a little until it became mine.

Meat loaf is fine as a meal, but it’s to die for as leftovers in sandwiches. It’s just so satisfying. It’s the kind of meal where you remember it the next day and wish you had some more.

This week I’m using the last rib roast from freezer storage. It’s a good size roast so I’ll be using the leftovers a lot this week. Rib roast ought to be going on sale in November and December, so I’ll be stocking up again before long.

  1. I haven’t done freezer meals, but I have tried doing 2 to 3 slow cooker meals on the weekend to last through the week. I only did it a couple of times and may try it again soon. It was so helpful having ready-to-eat meals that were made by me and not fast food.
