Monday
Breakfast: Sausage and eggs
Early Dinner: Deli style sandwiches

Tuesday
Breakfast: Toast and juice
Early Dinner: Red fish in butter sauce

Wednesday
Breakfast: Breakfast burritos
Early Dinner: Shrimp spring rolls

Thursday
Breakfast: French toast
Early Dinner: French onion soup. I’m going to make it in the Insta-pot and try to save some time over the stove.

Friday
Breakfast: Sweet rolls
Early Dinner: Taco salad

Saturday
Breakfast: Breakfast out since we’ll be hitting garage sales
Early Dinner: Leftover soup and toasted French bread

We are sweltering down here. I’m trying to avoid cooking when I can which is why I’m focusing on cold sandwiches, spring rolls, and using the pressure cooker to whip up some soup in a hurry. The recipe I’ve found says it can be done in about 30 minutes. That beats the two hours it usually takes cooking it on the stove.

We have some projects to finish outside, but it’s just too hot to stay outside past 10am. Even 9am is too hot but we tough it out anyway.

This week I want to concentrate on some computer housekeeping–as well as regular housekeeping. When the harvest comes in my kitchen is a cluttered jumble of produce, each of them waiting to be processed or waiting to ripen.

I don’t like being so disorganized but I have to live by the harvest’s timetable and not my own.

  1. Maria it has been over 100+ for the past 7 days and the heat index the past two or three has been between 110 to almost 120, we are trapped inside with AC and thankful for it keeping us cool.

    Meals have become cooking in the morning and reheating at meal time in the microwave if we eat at night. Otherwise simple ham and cheese sandwiches for me with a kosher pickle so have something in my stomach with my evening medicine.

    August hopefully will not be worse than July because not sure if Texans are really ready for the Apocalypse yet, LOL.

    We did have a very nice rain storm yesterday afternoon, it brought the temp outside to high 70’s for us but already this morning it is steamy and know it will be another hot one by days end.

    • Jackie: That’s us too. We’ve had a lot of rain. It makes me feel like I’m back in hot and steamy SE Texas. All we can do is stay indoors during the worst of it.

      The bad part of this muggy weather is not the humidity, but the mosquitoes that come afterward. I’m not generally bothered by bites, but they’ve been exceptionally bad lately.
