Early Dinner: Rib roast with sauteed spinach and brussel sprouts

Monday
Breakfast: Steak quesadillas
Early Dinner: Salt and pepper shrimp with stir fried veggies

Tuesday
Breakfast: Eggs with breakfast sausage
Early Dinner: Beef stir fry

Wednesday
Breakfast: Egg sandwich
Early Dinner: Chili

Thursday
Breakfast: Oatmeal
Early Dinner: Short ribs

Friday
Breakfast: Veggie omelette
Early Dinner: Mexican lasagna (recipe)

Saturday
Breakfast: Breakfast out — garage sales
Early Dinner: Pizza

We have had rain nearly every day, but we’re finally getting some dry days. For a while we stayed cooped up at home because we knew the roads leading out would be impassable.

When we finally went out we found a VW and a pickup truck abandoned. The VW had it the worst. The flood waters were so fast it pushed the Bug all the way to the barbed wire fence of somebody’s cattle pasture. That couldn’t have been pretty when the owner finally towed it out.

Hopefully, we’ll dry out soon. There’s lots to be done before winter gets here.

    Yes, it has been so rainy and wet and windy here in Central Texas. A few of my co-workers narrowly avoided some high-rising waters. One community about an hour and a half away had a rather decent bridge break apart.

    Today, however, is beautiful. Texas weather truly has personality
