Early Dinner: Leftover duckling in pita pockets

Wednesday
Breakfast: Bacon and eggs
Early Dinner: Meatloaf

Thursday
Breakfast: Breakfast kolaches
Early Dinner: Stuffed red snapper

Friday
Breakfast: Spinach omelette
Early Dinner: Leftover meatloaf

Saturday
Breakfast: Breakfast out since we’ll be hitting garage sales
Early Dinner: Pork fajitas

 

We picked up a duckling at Aldi. Normally, duckling is a bit too pricey for my blood, but this one was reasonable. Greg wanted to smoke the duck, but I thought we should deep fry it like we’ve done turkeys in the past. I don’t know what it is about deep frying but the meat just falls off the bone.

  1. I wondered where you got the duck; I didn’t think you had any on your homestead. I had duck years ago, in my youth; younger than 7 years old because I remember having it over my grandmother’s house and then we moved to California (from Pennsylvania) when I was 7 and never was back in my grandmother’s house. So I know I was quite young when I had it. I remember really liking it. I haven’t had any since. We are still in the process of thinning out the things in our freezer. Makes for some odd meals some days, but always tasty!
