Menu for the week of May 15, 2016

Breakfast: Pancakes!
Lunch:  Salad
Dinner:  Steak fajitas

Breakfast:  Eggs with leftover steak
Lunch:  Soup and sammiches
Dinner:  Salmon with asparagus and roasted potatoes

Breakfast:  Pancake leftovers
Lunch:  Soup and salad
Dinner:  Cheeseburgers

Breakfast: Cheese Quesadillas
Lunch: Tuna salad sandwiches
Dinner:  Rice bowl with shrimp and veggies

Breakfast: Oatmeal
Lunch: Brats on a bun
Dinner: Pot roast (leftovers)

Breakfast:  French toast
Lunch:  Soup
Dinner:  Mongolian beef with rice

Breakfast:  Breakfast out (We almost always have breakfast out if we’re hunting garage sales.)
Lunch:  Burgers
Dinner: Enchiladas with guacamole


And yet more rain for the coming week, so I guess we’ll be indoors a lot more. I might do some batch cooking this week so I can restock the freezer.

  1. Sounds yummy for the week! I usually make more than one meal but enough for one more meal that we will have within the next two weeks. Sometimes if I do freeze something, I usually use plastic containers 🙂


  2. Sounds good. I see you’re a fan of roast potatoes with salmon, too. One thing I would recommend if you tire of asparagus and have a surplus of peas –> process a great wad of peas with a touch of butter and salt and lashings of black pepper. Lemon juice and/or mint optional. Spoon on plate to form a mound and sprinkle fried smoked bacon pieces or pancetta on top. And place the salmon on top of it all. If you want to be playfully bold, you can sprinkle the crisp pancetta on top of the salmon instead. I’m feeling hungry. Just as well we have a roast lamb dinner : )
