Dinner: Steak with mushroom sauce and asparagus

Monday
Breakfast: Leftover steak and eggs
Lunch: Soup
Dinner: Skillet lasagna and garlic bread

Tuesday
Breakfast: Leftover pancakes
Lunch: BLTs
Dinner: Baked chicken

Wednesday
Breakfast: Oatmeal
Lunch: Leftover skillet lasagna
Dinner: Cheeseburgers

Thursday
Breakfast: Quesadillas
Lunch: Polish sausage
Dinner: Baked cod

Friday
Breakfast: Orange Danish
Lunch: Soup
Dinner: Burgers

Saturday
Breakfast: Spinach omelette
Lunch: Skipping lunch
Dinner: Braised short ribs

It’s supposed to rain next weekend, so I guess we’ll stay indoors. Just as well I suppose. I want to give the guest rooms a thorough once over before my company arrives next month.

I need to put some roosters in the freezer this week too. Three of them sneaked past my net pretending to be hens, but they finally gave themselves away and started crowing. They’re little birds, but they’ll still make good soup.

I’ve got three days before the rains start, so I need to finish as many of my outdoor chores as I can before it forces me indoors. Between you and me, I hope we get some solid rain. First because we’ve had very little, and second, because I could use the break. 🙂

  1. That skillet lasagna sounds delicious! One of the advantages of when work was slow (though it is picking up now) was that while waiting for jobs, I’d surf Facebook and liked tons of recipe sites. Got lots of new recipes to try in the months ahead. Hope you get the rain you want!

    We don’t do much to celebrate Mother’s Day here. I kind of adopted my mom’s philosophy. She thought kids should treat their moms specially every day of the year, not just on Mother’s Day. I did get a call from son wishing me a Happy Day (and a request to watch the grands if I could since he picked up an extra shift at work and his wife was at work). We threw a roast in the crock pot with potatoes and carrots. It was deliciously enjoyed by hubby and me, the grands and DIL when she came to pick up the kids. A portion went home for son to enjoy when he wanted to. All in all, a nice day!
