Menu for the week of June 17, 2018

Sunday: Father’s Day
Breakfast: Blueberry pancakes (recipe)
Early Dinner: Baked fish

Breakfast: Bacon quesadilla wraps
Early Dinner: Mexican lasagna (recipe)

Breakfast: Leftover pancakes
Early Dinner: Skillet chicken thighs and rice

Breakfast: Sausage kolaches
Early Dinner: Leftover Mexican lasagna

Breakfast: Cheese omelette
Early Dinner: Lamb chops

Breakfast: Migas (recipe)
Early Dinner: Shredded pork fajitas

Breakfast: Orange Danish
Early Dinner: Shrimp fried rice and egg rolls

Blueberries are ready to harvest so I plan on using some up in some pancakes this week. Blackberries are also ready to pick. I think I’ll be making jam from them. I love blackberry jam. It’s my favorite.

I bought a couple pounds of ground beef so I’ll be making several tins of Mexican Lasagna. It’s a simple recipe that freezes well. –So good on nights I don’t feel like cooking.

We got Nana back later than expected, but the extra time at the hospital must’ve done her good. It’s hard to keep her still. We’ve resorted to sitting with her in a makeshift pen. Having one of us close by keeps her quiet. She’ll sleep all day if one of us is with her.

We found too that if we remove the cone of shame during the day she’s in better spirits. Obviously, it has to go back on at night since she can’t be supervised.

The last few days have been stressful, but it’s good to have her home. Once she’s able to have bowel movements and put weight on her leg, I’ll feel a whole lot better. Baby steps. For now she’s home and she’s so happy to be back with family.

The hospital has her mugshot and under Notes, it says “grumpy”. (Their word for bitey.) Yup. That’s our Nana. She doesn’t like strangers, especially when they’re poking and prodding her. I can’t say I blame her there. I’ve been known to be bitey too under the circumstances. 🙂

  1. So glad Nana is doing okay overall! And who could blame her for being “grumpy”?!

    I love blackberries! It’s funny, because I like blackberry jam/jelly on biscuits, toast etc but on a peanut butter and jelly sandwich, I go for strawberry or grape. Maybe raspberry.
