Sunday

Early Dinner: Lynn’s pot roast (recipe)

Monday
Breakfast: Sausage and eggs
Early Dinner: Rotisserie chicken with potato salad

Tuesday
Breakfast: Mexican omelette with leftover fajita meat (freezer leftovers)
Early Dinner: Leftover pot roast

Wednesday
Breakfast: Bacon and eggs
Early Dinner: Skillet Lasagna

Thursday
Breakfast: Poached eggs and toast
Early Dinner: Leftover chicken in grilled sandwiches

Friday
Breakfast: Homemade pancakes (recipe)
Early Dinner: Vegetable Pad Thai

Saturday
Breakfast: Breakfast burritos
Early Dinner: Rib-eye steak

We’ve been sneaking lunches back into our day. It’s not much to write about so I won’t list them. Mostly it’s just a grilled cheese pannini or cheese and crackers…sometimes a can of tuna or sardines.

If we do eat a big lunch for whatever reason, we sometimes skip dinner altogether. It all depends how busy we are during the day–or how much energy we require. 🙂
