Menu for the week of April 8, 2018

Breakfast: Biscuits and gravy
Early Dinner: Jerked chicken thighs with asparagus

Breakfast: Cheese quesadillas
Early Dinner: Brisket sandwiches

Breakfast: Bagels
Early Dinner: BBQ ribs

Breakfast: Migas (recipe)
Early Dinner: Leftover rib roast

Breakfast: Leftover steak with eggs
Early Dinner: Shrimp stir fry

Breakfast: Breakfast burrito
Early Dinner: Taco salad

Breakfast: Breakfast out. We’re doing garage sales.
Early Dinner: Pizza

Last week’s menu got all turned around. Early in the week a neighbor brought us a bbq chicken she had made that day. Her husband was taking her out so rather than tuck it in the fridge she brought it to us. She brought us so much food it was enough for two meals.

That negated our plans to smoke a brisket so we saved it until Friday while the weather was nice. In the meantime, on Saturday another friend asked to pop over so we invited them to stay for dinner. Rather than skillet lasagna, I decided to do a rib roast. So now we have leftovers for days. I’ll freeze some and we’ll eat the rest this week.

One thing our dinner guests brought us were “jerk seasonings”. They had been to the Caribbean and brought us back some local flavors. I’m looking forward to trying it on some chicken tonight.

We were pressed for time last week. The weather was turning bad on Saturday so we rushed all week to get some much needed chores done on animal paddocks and animals. We got everything squared away, but every muscle on my body hurts. I can barely lift my arms.

I’ll be living on aspirin for the next few days.

    Having a weekly menu is helpful . Having great neighbors bring by BBQ chicken is a pretty good way to divert from said menu. Always good to be flexible.

    The weather here in Texas certainly took a turn for the chilly. It almost ruined a Crawfish boil I was attending. Plans had to change and the boil still happened. I still have leftovers. Yum.
