Menu for the week of April 2, 2017

Breakfast: Pancakes
Lunch: Soup
Dinner: Pork stir-fry

Breakfast: Bacon and eggs
Lunch: Leftover stir fry
Dinner: Braised short ribs

Breakfast: Leftover pancakes
Lunch: Leftover ribs in a sandwich
Dinner: Salmon

Breakfast: Breakfast burritos
Lunch: BLTs
Dinner: Steak

Breakfast: Bagels and cream cheese
Lunch: Steak salad with leftover steak
Dinner: Shrimp fried rice

Breakfast: Oatmeal
Lunch: Corndogs
Dinner: Spaghetti

Breakfast: Out hunting garage sales
Lunch: Burgers
Dinner: Taco salad

What a week it’s been. Spring is always hectic, but I have baby animals on the ground as well as a garden to get planted, so I find myself pulled in opposite directions. I always worry about the babies until I can get them past their critical stages.

In the garden, I have twenty-one raised beds. For each bed, I’ve been turning over, weeding, adding compost, then covering them with weed barrier fabric. I still have seven more to go.

Luckily today I get a break because it’s supposed to rain all day. Yay for rain. 🙂

Nothing too taxing for this week’s menu. Since I’m out all day long, I want to keep it simple and light. The only exception is next Friday when we plan to have a good old fashioned spaghetti dinner complete with garlic bread and a hearty salad.

By next week, most of the garden will be planted, and my baby animals are one week closer to getting past their critical stages. Let’s hope for excellent progress.

  1. Everything looks good with what you have planned. I like to keep it simple on those nights when it can be “crazy” here (i.e. watching the grands). We do our elaborate cooing the other days of the week. Leftovers are our friends here 🙂
